Golden Oyster Mushrooms

They are a tasty addition to any meal as it has a balanced “nutty” flavor which develops almost like cashews. The mushroom can be cooked until it is crispy, with the tiny flaky caps acting as a substitution for crispy bits similar to bacon. Please note that the brilliant yellow color is lost during cooking and is replaced with a golden brown color. Like its oyster mushroom cousins, it is high in protein and has immunity-boosting qualities. It also helps maintain healthy cholesterol levels. Shelf life is short and should be consumed within 3-5 days upon harvesting.

Coral Tooth

The coral tooth mushroom is a close relative of the lion’s mane mushroom. It has a delicate, branched out structure with rows of small, soft pinkish spines. It has a firm but brittle texture and a sweet, nutty taste. It can be enjoyed just like lion’s mane. Health benefits are going to be similar to its cousin, as well.

It has a firm but brittle texture and a sweet, nutty taste. It can be enjoyed just like lion’s mane. Health benefits are going to be similar to its cousin, as well.

The most common oyster mushroom due to its complex flavor profile, yet mild to the palate with a sweet, woodsy flavor, making it super versatile. Like with its oyster mushroom cousins, it is high in protein and has immunity-boosting qualities. It also helps maintain healthy cholesterol levels.

Tarragon Oyster

The tarragon oyster mushroom is quite a rare oyster mushroom as it is not commercially cultivated by mega farms. It is thought to only be found growing in the British Isles. This wild fellow was originally from the ancient woodlands surrounding Richmond Castle (North Yorkshire, Britain) and was found growing on a large fallen Beech tree. Now they’re growing in our mushroom grow house for all you amazing souls to enjoy. As the name suggests, its smell and taste resemble the herb tarragon, making it probably one of the finest-tasting oyster mushrooms there are. Its texture is quite fragile and easily crumbles when raw, but builds up to an amazing decadent bite once cooked.

Tarragon Oyster

The tarragon oyster mushroom is quite a rare oyster mushroom as it is not commercially cultivated by mega farms. It is thought to only be found growing in the British Isles. These have a unique makeup, as it maintains a very particular texture, almost crunching even after the chitin walls have been weakened from being cooked. The mild, earthy flavor has notes of a peppery, nutty finish, and the texture excites an average dish with variation and plays very well in crème sauces. In traditional Chinese medicine, it is used for the wellbeing of the stomach and kidneys. It also ensures that the spleen is well nourished. This mushroom is also recognized in present-day science as having anti-inflammatory, antifungal, antibiotic, and antitumoral properties.

A Sundown Mushroom exclusive, we’ve grown the Lilac Oyster mushroom from a wild spore print gifted by a friend. This oyster mushroom was found on an ancient pecan tree near a barn in Virginia. Unfortunately, the tree began to decay and had to be taken down, albeit with gratitude. After it came down, these oyster mushrooms were found growing! They were carefully harvested with their first spore print taken from some caps and the rest made their way on to a skillet. What better way to say goodbye to a beloved tree? We are honored to be able to grow these beautiful mushrooms on our farm. It has a velvety texture with a great meaty chew and subtle floral aroma. Like its oyster mushroom cousins, it is high in protein and has immunity- boosting qualities. It also helps maintain healthy cholesterol levels.
